So I made my claim and attended the interview. The new WC is quite a pleasant person, so I am fortunate this time.
Apparently I am on the same assessment period schedule as before (which started shortly before I stopped working).
Since I made my claim after my final wage payment, HMRC (according to this new WC) do not notify DWP of wage payments when there is no claim in place. On that note, DWP will not know what I earned in the assessment period, just that I earned nil since my new claim.
Watch this space.......
